"Comfort with personality," innovative drink offerings and sustainability are all key
The landscape of country pubs is evolving rapidly as trends in 2025 signal a fresh approach to staying relevant in a challenging market. According to The Morning Advertiser, décor that embraces “comfort with personality” has emerged as a leading factor in shaping the future of pubs, alongside collaborations, innovative drink offerings, and sustainability.
With the pressures brought on by rising costs following last year’s budget announcement, many pubs are feeling the strain, making adaptation and diversification essential for survival.
Sustainability continues to take the stage as pub owners lean towards locally sourced goods and renewable energy initiatives to meet evolving consumer expectations and environmental responsibilities. This focus on sustainability is complemented by a trend toward creating welcoming, multifunctional spaces. Pubs are increasingly balancing their rustic heritage with modern amenities, transforming their spaces into destinations not only for dining but also for remote working, social events, and community networking.
At CIC, we’ve been working closely with pub owners to implement shifting trends for over 25 years, helping them adapt their premises in ways that blend history with contemporary needs. A perfect example of this effort is the renovation of the Grade II-listed White Hart Pub in Ampthill. For years, this pub lay dormant, but through extensive remodelling on behalf of Punch Taverns and Oakman Inns, we breathed new life into the space. The bar and dining areas were reimagined to increase capacity, and a stylish gallery kitchen was installed to elevate the culinary experience. To extend the venue’s profitability, we also created an outdoor dining and drinking area alongside a function room in the Stables Bar. This refurbishment not only preserved the building’s heritage but also introduced versatility and a fresh appeal to attract new patrons.
Similarly, The Dragoon in Brampton, Cambridgeshire, underwent a thoughtful transformation to meet its community’s changing needs. The pub, formerly not living up to its potential, shifted its focus to home-cooked meals in a relaxed and inviting environment. With a growing housing development nearby, the redesign—crafted to embody a country pub ambiance—aimed to capture a broader customer base while simultaneously enhancing the experience for loyal locals.
Country pubs in 2025 are being redefined through inventive designs, enriched customer experiences, and bold strategies. At CIC, we are proud to be part of this exciting evolution, supporting pub owners through our expertise in tailoring their spaces to help them thrive.
