To mitigate the impact of closures, many pubs and restaurants have shown themselves to be incredibly versatile. From local food deliveries to novel ways of bringing their offering to the front rooms of their regulars, the hospitality industry has shown great ingenuity. Since March, almost 3,000 new UK restaurants have registered with multi-brand ‘dark kitchens’ such as Deliveroo to meet the demand for app deliveries and any pub or restaurant with a large kitchen space can exploit this opportunity.
